Somerset Cider and Apple Cake
175g unsalted butter
175g light brown sugar
250g self-raising flour
500g apples peeled, cored and cut into 20mm pieces
2 tbs demerara sugar
Grease a 23cm round tin and line base.
Preheat the oven to 160°C.
Beat butter and sugar together until creamy.
Add one egg at a time blending after each addition.
Sift flour and fold into the mixture.
Add apples and cider and combine into the mixture.
Add mixture to prepared baking tin and sprinkle with demerara sugar.
Bake for 1 hour.
